I coudn't resist this photo as the garden is looking so good at the moment. The flower isn't edible by the way although many are.
3 Courgettes - grated
3 spring onions - finely chopped
100 grams of feta
small bunch of mint and dill- chopped
1 egg - beaten
tablespoon of flour
oil for frying
Leave the grated cougette for about half an hour and sqeeze to remove the excess water.
Crumble the feta into the courgette mixture and add the herbs, onions, beaten egg and flour and mix together.
Some recipes leave out the flour but I prefer to add it as it gives a better texture
Heat a small amount of oil in a frying pan and drop in the mixture one spoon at a time and fry
Turn over carefully after a few minutes.
Drain on some kitchen paper and serve, it makes a delcious light lunch.
They are even delicious cold.
